INGREDIENTS

2 Cup
Pasta
1 Medium
Cucumber (Chopped)
1 Small
Onion (chopped)
2 Medium
Tomatoes (Quartered)
1 Cup
Pitted Black Olives (Sliced)
1 Cup
Salad Dressing (Italian-Style )
Cold Pasta Salad
Great for brunch, luncheons, or whatever. Easy and quick to make. I find that this salad is always popular at get-together and usually disappears rather quickly.

COOKING METHOD

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
  2. Once the water is boiling, stir in the pasta and return to a boil.
  3. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes.
  4. Drain and cool by running cold water over the pasta in a colander set in the sink.
  5. Combine cooked and cooled pasta with the cucumber, onion, tomatoes, and olives in a large bowl.
  6. Pour the Italian dressing over the salad and stir to combine.
  7. Cover and refrigerate for at least two hours before serving.
